USA Dry Pea & Lentil Council represents over 5,000 growers, processors, and exporters of US grown dry peas, lentils, and chickpeas (also called pulses or legumes). The council's mission is to provide research support, expand current markets and develop new markets and to increase awareness among consumers and professionals in the food industry. Dry peas,lentils and chickpeas are a rich source of protein (22-34%) and dietary fiber (15-40%) as well as low in fat (1-7%), cholesterol-free, and a rich source of B vitamins, potassium and folate. Pulses and pulse-fortified foods can be utilized in dietetics formulations for thetreatment and prevention of diabetes, cardiovascular diseases, colon cancer, and control of blood cholesterol level.
