Acadian Sturgeon was founded in March 2005 based on the passion for sturgeon and sturgeon science background of the owners Cornel & Dorina Ceapa. Our aim is producing the best sturgeon and caviar in the world right here in Canada! We work only with local sturgeon species, Atlantic and shortnose sturgeon. Sturgeon is used nose-to-tail and the caviar and sturgeon products are sold all across Canada, online (Costco.ca, online store), to food service, deli stores etc. We also offer an educational sturgeon Sturgeon Safari and a Caviar Academy that can be organized accross Canada.
Our strategy of developing a sturgeon aquaculture business is truly one-of-a-kind in this world! The company harvests up to 350 of the fish a year quota, in a traditional and strictly regulated wild Atlantic sturgeon fishery. We also produce shortnose and Atlantic sturgeon caviar and meat in a responsible land based aquaculture operation and sell live sturgeon all over the world for restocking, amd aquaculture. We hope our business model of coexistence between sustainable harvest of wild sturgeon and responsble aquaculture will be used for other species! All our products are certified Ocean Wise.
