We start with 40 pound blocks of cheese and reduce the block down to 1/2 inch cubes. These cubes go into a drum that rotates in our vacuum chamber where we boil the water out of the cheese without melting it. We end up with an irregular crouton that is made of pure cheese with no damaged flavors or damaged proteins. Our product is protein packed, lightweight and needs no refrigeration and has a one year shelf life.
